600 g mince (ostrich or lamb)
1 red onion, chopped
2 tablespoons of full cream milk (optional)
4 tablespoons of Pauli’s Saffron Chilli Chutney
Rocket (or lettuce)
Burger Buns (4)
Add the mince and chopped onion to a bowl and season with salt and pepper. Pour over the milk and use your hands to mix together. Use a scale to prepare 150 g patties by making balls and then flattening them (you can flatten them in a pan using a spatula). Heat the butter in a heavy based pan and fry the patties (2 at a time).
Prepare the rolls to your liking (toasted or not), adding the Pauli’s Saffron Chilli Chutney to the top of the patty and garnish with mayo, a slice of tomato and rocket or lettuce leaves. Add some more red onion as garnish. Serves 4
