Pauli’s Brinjali Potato Salad

We love this potato salad recipe, using our delicious Spicy Brinjali Sauce mixed with mayonnaise.

It’s a great salad for your braai or any family meal.


600 g peeled and cubed potatoes (sweet potatoes also work really well)

4 tablespoons mayonnaise

2 tablespoons Pauli’s Brinjali

1/2 red pepper deseeded and finely chopped

20 g fresh coriander, chopped

Salt and pepper to taste


Add the potatoes to a pot of boiling, salted water and cook for about 15 – 20 minutes (to check if they are ready – a fork should push easily through each potato cube).  Drain the potatoes and allow to cool for 15 minutes.  

Make the dressing in a bowl by adding the mayo, Pauli’s Brinjali, salt and pepper.  Whisk together and add the coriander and red pepper and gently mix.

Add the potatoes and fold in until you have everything coated in the delicious Pauli’s Brinjali mayo.  Add a little more chopped coriander to the top as a garnish.  Enjoy!
